Queen of the throw-together meals returns, looking oh so fancy at the office. This is about to be one of my new staples, and it took me all of 5 minutes to throw together this morning. I made a batch of quinoa on Monday night and used it throughout the week to throw together meals for work. Here’s one of my lunches:
To make: mix together equal parts of quinoa and black beans, about a ½ cup each. Add ¼ cup tomato sauce, a splash of apple cider vinegar, + cumin, chili powder, and garlic. I also grabbed a couple leaves of kale, which I washed and tore apart at the office for a salad. + shredded carrots, Garlic Expressions, and Amy’s Green Goddess dressing.
Quick meals like this are my go-to throughout the week to keep my health / budget / time management in check while working full-time. It might not look super fancy, but it tastes good and it's nourishing, so I'm all about it.
